The Food & Beverage Manager is responsible for managing all Food & Beverage and Coat Check operations.  This role will ensure a high caliber guest experience to all Theatre guests, create inviting product presentation with high quality, cost efficient offerings to maximize sales, and will manage, mentor, and support the Food & Beverage and Coat Check team.

ESSENTIAL JOB FUNCTION

DUTY AND RESPONSIBILITIES

·         Deliver the highest caliber of guest services during all events and functions within the Theatre

·         Understand and create menu offerings, product presentation, and competitive pricing to maximize sales

·         Develop and implement new creative concepts in operations, policies, and procedures

·         Monitor and maintain efficient inventory levels on products and equipment and perform monthly product true up

·         Be present for all Theatre events to ensure proper event prep, consistent staff performance, and efficient guest service orientated operations

·         Schedule, manage, and train the Food & Beverage team, including F&B Supervisors, Bartenders, Barbacks, Expeditors, Hosts, and Coat Check Attendants

·         Manage Food and Beverage cash handling procedures and policies, including issuing starting banks, collecting and verifying sales revenue, preparation and submittal of currency and checks for deposits, stand audits, and vault reconciliation

·         Responsible for POS system, including set-up, updates, maintenance and repair, and staff training

·         Develop and manage relationships with Food and Beverage vendors

·         Act as the direct liaison to outside caterers for all VIP and special event functions

·         Repair and maintain Food & Beverage equipment, sales locations, and storage areas

·         Provide staff with pertinent event information for events and functions during pre-event meetings and/or electronically

·         Respond to escalated Food & Beverage emergencies or guest related issues/concerns in a timely manner

·         Create, update, and maintain all Food & Beverage operation manuals and SOPs

·         Scout staff to ensure appropriate staffing pool

·         Participate in client walk-throughs, provide recommendations for product selection, and create event budgets

·         Manage Department operating budget

·         Collaborate with the Box Office Manager, Front of House Manager, and Production Manager on a consistent basis

·         Facilitate accurate payroll processing for staff and timely resolution of related issues

·         Work with General Manager regarding employee matters and resolutions

·         Ensure Theatre is fully compliant and up to date on all State and City Food and Beverage licenses and health regulations

·         Create all event related documentation i.e. Event sales reports, inventory control documents, sales tracking and analysis

KNOWLEDGE, SKILLS, AND ABILITIES REQUIRED

·         Knowledge and experience with Food and Beverage operations and practices for a large Theatre environment

·         Supervision and management of large diverse FT and PT staff

·         Available to work a flexible schedule, including evening and weekend hours

·         Strong knowledge of beverages including spirits, cocktails, beer, wine, and coffee

·         BASSET certified

·         Excellent verbal and written communication skills

·         Independent problem solving and multi-tasking skills in a fast-paced, high energy, artistic environment

·         Solid organizational skills, strong attention to detail

·         Highly computer literate

·         Strong spirit of optimism and collaboration.
